Unlike black tea, green tea is not fermented. Normally, the enzymes contained in freshly plucked tea leaves cause fermentation to automatically set in. To avoid this, green tea leaves are briefly dried with great heat immediately after plucking.

Chinese green tea is dried in large pans over heat. In Japan, the leaves are placed in a drum and are treated with hot steam for at least two minutes.

And please don't forget Matcha. Sometimes called The Tea of Tea,  Matcha is the tea used for the Japanese Tea Ceremomy.
Matcha leaves are stripped of all the fine veins and then ground up to create a fine powder. When you drink a cup of Matcha you are drinking the entire leaf with all its' nutrients.
